Baking for One: Baking Powder Biscuits rev. 1

  • Mix:
    • 1/3 c. flour
    • pinch salt
    • 1/2 t. baking powder
  • Cut in:
    • 1 T. butter (or 1 T. oil if you're making drop biscuits)
  • Mix in gently:
    • 2 T. milk or cream

If you're making drop biscuits, just spoon it into four irregular lumps on a baking sheet (or in a shallow cake pan). If you're making rolled biscuits, knead the dough lightly, form it into four lumps and roll them into rounds. You don't have enough dough to bother with the rolling it out and cutting it into circles business.

  • Brush the tops with milk or butter
  • Bake at 450 F for about 12 minutes.
 

Results

Whoa, the drop biscuits were way too small, so there was too high a crust to-inside ratio. For drop biscuits, stick to making two, but four may still be ok for rolling them out. Also, this is much too much baking powder (which I kind of suspected). This counts as a "learning experience".
